Its texture lends well to sautéing and tossing and it retains its texture better than other types of kale when subjected to intense heat. Here is a fast, tasty and easy recipe of sautéed Lacinato Kale, spruced up with the right amount of spicy dried chili pepper flakes. If you don't like the idea of spicy food or want to lower the amount, feel free to omit!

This spicy sautéed kale is a fantastic side dish, but it can be turned into a meal when tossed over cooked pasta or grains. Serve it over a thick slice of peasant style bread for a Mediterranean evening meal. You can also turn it into a tasty vegetarian pizza topping.

 

Ingredients:

  • 1 large bunch of freshly picked Lacinato Kale
  • 3 tbsp. Extra Virgin Olive Oil
  • 3 cloves of garlic, crushed and minced
  • 1/4 teaspoon dried chili flakes
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Direction

Thoroughly wash the kale, remove the main stem and chop finely. 

In a large skillet, heat the olive oil on medium heat. Add the garlic and sauté for 2 minutes until lightly brown. 

Add the kale in batches and toss to cover with oil. When all the kale is added, cover and allow to steam for 5 minutes.

Remove the lid, add salt and pepper to taste. Add the dried Ancho Poblano flakes.

Continue cooking for a few more minutes until the moisture has almost completely evaporated. Serve immediately.
